Writing Standards:

expectations for writing types are defined in standards 1–3 above.) a. Produce
text (print or nonprint) that explores a variety of cultures and perspectives.

produce and publish writing as well as to interact and collaborate with others;
demonstrate sufficient command of keyboarding skills to type a minimum of three

Suggestions:
You could allow the kids to create their letters on a poster board or smaller board to present to each other or hang around the classroom or the hallway to show others what they have learned. You could even do this before an open house or parent night to show them what their kids have written to them. Also to save time have the worksheets printed out ahead of time.
